otherwise known as St. Patrick's Day. If anyone remembers last year  I cooked a delicious meal and then the plague fell upon the house. Okay, just a stomach flu but when the number of sick people out number you 3:1  it's the plague. All I can say is that it's a good thing we had the family over to celebrate a day early this year. My St. Patrick's Day began the same way it did last year! The good news is that it appears to have been an isolated incident involving only one small person and I'm happy to report that this morning he is back to feeling quite himself. I never got around to taking a picture last year so I'll share that with you now and repost the recipe too. Oh yeah! we also received our highest accumulating snowfall of the year. This is probably the Yankee version of The casserole referenced in the piece that Lauren wrote about. It's crazy comfort nonetheless and a favorite in the Hand house. It's like a mini Thanksging dinner.  chicken and dressing casserole What you'll need: 4-6 boneless skinless chicken breasts (you can leave them whole or cut them into bite size pieces. I've used chicken breast tenders too. Pretty much whatever you've got on hand.)  Sliced Swiss cheese (enough to cover the chicken 1 can cream of chicken soup 3/4 cup very hot water 1 box of stove top stuffing or seasoned bread cubes (enough to cover the chicken and the cheese) 4-5 Tbl spoons cold butter cut into cubes What you'll do: Preheat oven to 350 degrees. Spray a 9x13 baking dish with cooking spray and lay the chicken in the dish. Cover the chicken with the Swiss cheese slices and cover all of the chicken and cheese with the stuffing mix.
